Infarinate leggermente le costolette, passatele nelle uova sbattute poco salate e poi nel pangrattato a grana sottile. In un tegame lasciate fondere il burro e, quando vedete che schiumeggia, adagiatevi le costolette poi, a fuoco basso, lasciatele dorare da entrambe le parti.
